  • 1 1/2 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 tablespoons oat milk
  • 2 teaspoons cornstarch
  • Vegan whipped cream for serving

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water; let it thicken for about 5 minutes.
  2. Cream together vegan butter, sugars, flax egg, and vanilla in a mixing bowl.
  3. In another bowl, whisk together flour, pumpkin pie spice, baking powder, and salt; combine with wet ingredients until smooth.
  4. Mix pumpkin puree, maple syrup, oat milk, cornstarch, vanilla bean paste, and additional pumpkin pie spice in a separate bowl until creamy.
  5. Preheat oven to 350°F (175°C). Scoop cookie dough onto lined baking sheets; press down gently to create space for filling.
  6. Spoon pumpkin filling into each cookie dough ball and bake for about 15 minutes or until lightly golden.
