  • 100g sesame seeds
  • 50g pumpkin seeds
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 3 tbsp maple syrup
  • 2 tbsp tahini
  • 80g dark chocolate (melted)
  • 50g pomegranate seeds

Instructions

  1. Preheat your oven to 180C/160C fan/350F.
  2. In a mixing bowl, combine sesame seeds, pumpkin seeds, cinnamon (if using), and a pinch of salt. Stir well.
  3. Add tahini and maple syrup to the dry mixture and mix until well combined.
  4. Spread the mixture evenly on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until golden brown around the edges. Let cool completely.
  6. Once cooled, spread melted dark chocolate over the bark base and top with pomegranate seeds, pressing them lightly into the chocolate.
  7. Refrigerate until set, then break into pieces and store in an airtight container.
