  • 1 tsp olive oil or butter
  • Salt & pepper, to taste
  • 2 medium potatoes, peeled & diced
  • 1 tbsp butter
  • 2 tbsp milk
  • 1 cup broccoli florets
  • 1 cup sliced carrots

Instructions

  1. Season the salmon with salt and pepper. Heat olive oil or butter in a skillet over medium heat and pan-fry the salmon for 3-4 minutes on each side until cooked through.
  2. Boil diced potatoes in salted water for 12-15 minutes until fork-tender. Drain, mash with butter and milk, and season with salt.
  3. Steam sliced carrots for about 5-6 minutes and broccoli florets for about 4-5 minutes until tender yet crisp.
  4. Plate the salmon alongside mashed potatoes, carrots, and broccoli. Serve warm.
