  • 4 Mini Pumpkins (or ramekins)
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out seeds, or set aside ramekins in a baking dish.
  3. In a mixing bowl, whisk together egg yolks and sugar until smooth. Gradually add heavy cream, vanilla extract, pumpkin puree, cinnamon, ginger, and salt. Mix until fully combined.
  4. Pour custard mixture into prepared pumpkins or ramekins, filling them about three-quarters full.
  5. Create a water bath by filling the baking dish with hot water halfway up the sides of the molds.
  6. Bake for approximately 30 minutes or until set but slightly jiggly in the center.
  7. Let cool to room temperature before refrigerating for at least two hours.
  8. When chilled, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
