  • ¼ cup raw apple cider vinegar (with the 'mother')
  • 2 tbsp pumpkin puree
  • 2 tbsp maple syrup
  • ¼ tsp pumpkin pie spice
  • ½ cup filtered water
  • Sparkling water (to serve)

Instructions

  1. In a saucepan, gently heat filtered water, pumpkin puree, maple syrup, and pumpkin pie spice until just steaming. Whisk until smooth.
  2. Remove from heat and stir in apple cider vinegar.
  3. Pour into a jar and cool for about 30 minutes before refrigerating for 24–48 hours to allow flavors to meld.
  4. Optionally strain for clarity or leave unstrained for texture.
  5. When ready to serve, fill a glass with ice and mix one part shrub base with three parts sparkling water. Stir gently and garnish if desired.
