  • Milk chocolate squares or bars (enough for 12 sandwich cookies)
  • Cinnamon sugar mixture (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Cream together butter, brown sugar, and granulated sugar until fluffy.
  2. Beat in the egg and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking soda, spices, and salt. Gradually combine with wet mixture.
  4. Roll out dough to 1/4 inch thick and cut into pumpkin shapes.
  5. Carve jack-o’-lantern faces on half of the cookies.
  6. Assemble by placing chocolate on uncut cookies, topping with carved cookies, and sealing edges.
  7. Bake for 10–12 minutes until golden on edges. Dust with cinnamon sugar while warm.
