  • 1 cup cucumber, sliced
  • 1 cup cherry or plum tomatoes, halved
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup arugula
  • 1 tsp olive oil
  • 1 tbsp butter
  • 23 tbsp milk (or plant milk)
  • Salt to taste
  • Pepper to taste
  • Garlic powder (optional)
  • Squeeze of lemon (optional)
  • 1 tsp lemon juice or vinegar

Instructions

  1. Season the chicken breast with salt, pepper, and garlic powder if desired. Heat olive oil in a skillet over medium heat. Place the seasoned chicken in the skillet. Cook for 5-6 minutes per side until the chicken is golden brown and fully cooked through. Remove from heat and let it rest before slicing.
  2. Boil diced potatoes in salted water until fork-tender (about 12-15 minutes). Drain the potatoes well. Mash them with butter and milk until smooth and fluffy. Season with salt to taste.
  3. In a mixing bowl, combine all salad ingredients: sliced cucumber, halved tomatoes, chopped peppers, and arugula. Drizzle with olive oil and lemon juice (or vinegar). Sprinkle with salt and pepper; toss gently to combine.
