  • 240ml milk of choice
  • 3 tbsp coconut oil
  • 3 tbsp tahini
  • 1.5 tbsp agave syrup
  • 115g oat flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • Pinch of nutmeg
  • Pinch of all spice
  • Pinch of cardamom
  • 1/4 tsp salt
  • 40g walnuts
  • 1 tbsp agave syrup (for walnuts)
  • Pinch of cinnamon (for walnuts)
  • Pinch of salt (for walnuts)
  • 2 tbsp tahini (for drizzle)
  • 1 tbsp agave syrup (for drizzle)
  • 23 tsp milk of choice (for drizzle)
  • Pinch of salt (for drizzle)

Instructions

  1. 1. Preheat your oven to 180°C (350°F).
  2. 2. In a saucepan, cook chopped figs with milk over medium heat for 5–7 minutes. Mash into a smooth paste.
  3. 3. Remove from heat; mix in coconut oil, tahini, and agave syrup until combined.
  4. 4. In a large bowl, combine oat flour, baking powder, spices, and salt. Fold in the fig mixture until smooth.
  5. 5. Divide batter into lightly oiled mini basins and bake for 25–30 minutes or until a skewer inserted comes out clean.
  6. 6. For candied walnuts: Cook walnuts with agave syrup and salt over medium heat until coated; cool on a lined baking sheet.
  7. 7. Make drizzle by mixing tahini, agave syrup, milk, and salt together.
  8. 8. Serve puddings warm topped with candied walnuts and drizzle.
