  • 2 brown onions, chopped
  • 46 cloves garlic, peeled
  • 1-inch piece ginger, chopped
  • 400g canned chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric
  • 400ml coconut milk
  • 750g diced lamb leg
  • Vegetable oil for cooking

Instructions

  1. In a food processor, blend onions, garlic, and ginger with 250ml of water until smooth. Pour into a large pot.
  2. Simmer the mixture on low heat for 15 minutes; then add vegetable oil and cook until golden brown.
  3. Add diced lamb to the pot and brown for about 8-10 minutes.
  4. Stir in chopped tomatoes, chicken stock, cinnamon, cumin, and turmeric. Bring to a boil, then reduce to a simmer for 45 minutes.
  5. Add coconut milk and stir well; bring back to a simmer. Stir in spinach just before serving.
