  • 2 & 1/3 cups flour

  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until fluffy (about 3–5 minutes).
  3. Mix in the egg and vanilla extract until well combined.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Scoop nine equal portions onto the prepared baking sheet, gently flattening each to about 1 inch thick and creating an indentation in the center for filling.
  6. Bake for 8–9 minutes until lightly golden at edges; let cool before transferring to a wire rack.
