  • 12 oz rotini pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 8 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese

  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Boil salted water in a large pot and cook rotini until al dente (9-10 minutes). Reserve 1 cup pasta water before draining.
  2. Season the chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil over medium-high heat and cook chicken until golden brown (6-8 minutes). Remove and set aside.
  4. In the same skillet, melt butter and sauté minced garlic for 1 minute.
  5. Add flour to create a roux; whisk for 1-2 minutes.
  6. Gradually add milk while whisking to avoid lumps; simmer for 3-5 minutes until slightly thickened.
  7. Stir in Velveeta and cream cheese until melted and smooth; then add mozzarella and Parmesan until fully combined.
  8. Mix in cooked rotini and chicken; adjust sauce consistency with reserved pasta water if needed.
