  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt and cracked black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Arrange the halved plums cut-side up on a lined baking tray. Drizzle with olive oil and honey (if using). Roast for 20-25 minutes until soft and caramelized.
  2. Allow the roasted plums to cool slightly.
  3. Place the burrata in the center of a serving plate and spoon the roasted plums around it.
  4. Sprinkle chopped pistachios and thyme leaves over the top. Drizzle with more olive oil and season with sea salt and cracked black pepper.
