  • 2 cups apple cider (real, unfiltered)
  • 1 cup heavy cream
  • 1½ cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup unsalted butter (cubed)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • pinch of ground cloves
  • ½ tsp sea salt

Instructions

  1. In a medium saucepan, boil the apple cider until reduced to about ½ cup. Stir in spices and set aside.
  2. Line an 8×8-inch baking pan with parchment paper and lightly butter it.
  3. Whisk the reduced cider with heavy cream; set aside.
  4. In a heavy-bottomed saucepan, combine sugar, corn syrup, and cubed butter over medium heat until dissolved.
  5. Add the cream mixture slowly to the sugar mixture; stir gently.
  6. Cook until it reaches 248°F (firm-ball stage), stirring occasionally (around 15–20 minutes).
  7. Remove from heat; mix in vanilla extract and sea salt.
  8. Pour into prepared pan and cool completely before cutting into squares.
